Carrot Cookies

2 cups flour
1/2 tsp soda
1/2 tsp baking powder
1 cup lard
1 cup brown sugar
3/4 cup coconut shredded
2 eggs
1 tsp vanilla
2 cups oatmeal
1 cup grated carrots
1 cup nuts(optional)

Preheat oven 350 F

1) Combine lard and sugar then add eggs,vanilla and salt.
2)Add grated carrots,coconut and nuts.
3) Stir in oatmeal then flour with baking soda and baking powder.
Drop by tsp full onto greased cookie sheet.
Bake 18 to 22 minutes

Chocolate Chip Cookies 2

1 package butter pecan, chocolate chip, chocolate fudge, devil's food, German, chocolate or yellow cake mix
* 1/2 cup butter or margarine -- softened
* 1 teaspoon vanilla
* 2 eggs
* 1/2 cup chopped nuts
* 1 (6 ounce) package semisweet chocolate chips (1 cup)

Heat oven to 350°. Combine half of the dry cake mix , butter, vanilla and eggs in large bowl and mix until smooth. Stir in remaining cake mix, nuts and chocolate chips.

Drop dough by rounded teaspoonfuls about 2 inches apart onto ungreased cookie sheet. Bake 10 to 12 minutes or until edges are set (centers will be soft). Cool 1 minute; remove from cookie sheet to wire rack.

Brown Sugar Cookies

3 1/2 cup flour
1 tsp. baking soda
1 tsp baking powder
1/2 tsp salt
1-1lb bag of brown sugar
1 cup lard(I use margarine)
2 eggs
1 cup milk
1 1/2 tsps vanilla

Preheat oven 350 F

1) Mix brown sugar with lard.
2) Add eggs,vanilla,milk and salt.
3) Add flour,baking soda and baking powder.
Mix till smooth
Drop by tsp full onto a greased cookie sheet
Bake for 10 minutes

I sometimes add raisins,dates or coconut to this batter(1 cup)

Old Fashioned Ginger Snaps

3/4 cup lard
1 cup brown sugar
1 cup molasses
1 egg
1 tsp cinnamon
1 tsp ginger
1/2 tsp cloves
1/2 tsp salt
2 tsps soda
2 1/4 cups flour

Preheat oven 375 F

Mix ingredients in order given.
Roll in 1 inch balls and place on cookie sheet.
Flatten with a fork or the bottom of a glass dipped in sugar.
Bake 8 to 10 minutes.

I love these cookies with a cup of hot tea.

Old Fashioned Ginger Creams

1/4 cup lard
1/2 cup white sugar
1 egg
1/3 cup molasses
1/2 tsp salt
1 tsp ginger
1 tsp cinnamon
1/2 tsp cloves
1 1/2 tsps baking soda
2 cups flour

Preheat oven 375 F

Mix ingredients in order given
Drop by tsp full onto greased cookie sheet
Bake 8 to 10 minutes

Bake 8 to 10 minutes

Date And Raisin Cookies

1 1/2 cups lard
1 cup brown sugar
1 cup white sugar
Mix Together then add:
2 eggs
2 tsps vanilla
1 cup sour milk(I add 1 tsp vinegar to get sour milk)
1/2 tsp salt
Mix well the add
1 cup raisins
1 cup chopped dates
Mix:
2 cups flour
1 tsp baking powder
1 tsp baking soda

Mix well then drop by tsp full onto greased cookie sheet.
Bake at 350 F For 10 to 12 minutes.

These cookies are just great!

Sugar Cookies

2/3 cup lard
3/4 cup sugar
1/2 tps grated orange peel
1/2 tsp vanilla
1 egg
4 tsps milk
1/4 tsp salt
1 1/2 tsps baking powder
2 cups flour

Preheat oven 375 F

Combine all ingredients and mix well.
Roll out to 1/4 inch thick on floured surface.
Cut in your favorite shapes.
Place on non greased cookie sheet.
Bake for 10 to 15 minutes

Cookies can be frosted and topped with a 1/2 of a cherry.
Kids just love these and so do grown ups!
